A TWIST ON A CLASSIC ETON MESS

My biggest downfall is dessert! I am a huge dessert lover and if I can get away with making something I will! I tend to stick to one homemade dessert a week on a Sunday. I dont know why, but I feel the need to have something sweet after a roast dinner! One of my favourite desserts is Eton Mess and now summer is in full swing, I don’t feel so bad making it. I was given a bottle of Special Edition Eton Mess Baileys so there was no excuse in me not making one and adding an extra twist!

Ingredients

  • 150g Strawberries
  • 150g Rasperries
  • 150ml Cream
  • 3 Meringe Nests (smashed)
  • 50ml Eton Mess Baileys

Method

Cut the strawberries into small chunks and mix together with the raspberries and the smashed meringue. In a mixing bowl whisk the cream until thick. Once the cream is a thick consistency add the strawberries, raspberries and meringue (leaving some aside for decoration) and gently fold together. Spoon the mixture into dishes of choice and then sprinkle the left over fruit and meringue. Pour over the Baileys and serve.
