I do love me a bit of homemade banana loaf. Its even tastier when its just cooled down and still squidy and warm. As part of a homeschooling lesson (albeit it being in the easter holidays) we made some banana bread. Its so simple and the result is pretty good. I did have a bit of a mild panic that I didn’t actually have any flour, but luckily I had some stashed away! You can actually find this recipe online (or if your me, ask a friend!) I thought I would share it, mainly because I then have reference to it! But I would highly recommend making it!

  • 150g caster sugar
  • 50g softened butter
  • 2 eggs
  • 4 tablespoons water
  • 3 very ripe mashed bananas
  • 200g plain flour
  • 1 teaspoon bicarbonate of soda
  • 1/4 of a teaspoon baking powder
  1. Preheat oven to 180 c/ gas mark 4 and line a loaf tin of baking paper
  2. In a medium bowl beat sugar and butter till smooth and creamy. Beat in the eggs, water and bananas with the sugar mixture until well blended
  3. Mix in the flour, bicarbonate of soda and baking powder just until the mixture is moistened. Be sure to scrape the sides of the bowl to blend all ingredients
  4. Bake till the top is firm to the touch and golden brown in colour. When bread is removed from the oven, allow to cool on its side for 10 minutes, then remove from tin and let cool on wire rack (I baked for 30 minutes, then covered with foil and baked for an additional 15)
